PROPERTIES

Caramel syrup is a viscous liquid sweetener characterized by high density and controlled viscosity. Its color ranges from light amber to deep brown, determined by the degree of sugar caramelization.
Chemically, the syrup exhibits mild acidity due to organic acids (e.g., formic acid, acetic acid) generated during caramelization. The negatively charged molecular surface enhances dispersion stability in complex food matrices. Precise temperature control is critical during high-temperature processing to prevent over-caramelization via Maillard reaction.
The syrup’s low water activity and high osmotic pressure naturally inhibit microbial growth. For long-term storage, light-resistant and airtight packaging is required to prevent moisture absorption, oxidative hardening, and flavor degradation.As a multifunctional ingredient, it simultaneously provides coloration, flavor enhancement, and texture modification. Adjustable concentration ensures compatibility with filling, blending, and other industrial processes. Safety compliance meets global regulatory standards for caramel-based additives.

01 What is Caramel?
 
Caramel is a light to dark brown liquid or solid produced through controlled heating of sugar, primarily used for flavoring. It complies with the French AFNOR NFV00-100 standard for "aromatic caramel" and the European Directives 231/2012 and 1333/2008 defining caramel color (E150a). Caramel is uniquely classified in Europe and cannot be labeled as "caramel" outside the EU. In non-European regions, it is typically labeled as Class I Caramel Color or "caramel" based on its application.
 
 
02 What are the Applications of Caramel?
 
Caramel enhances both flavor and color in finished products. According to EU regulations: - If used primarily for flavoring, it must be labeled as an ingredient (caramel). - If used primarily for coloring, it must be labeled as an additive (color: E150a).
